Lemon Herb Baked Tofu

A delightful blend of tangy lemon, fragrant herbs, and hearty tofu, creating a deliciously satisfying meal that is perfectly vegan and healthy.

Ingredients

Scale
  • 1 block firm tofu
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Press the tofu to remove excess moisture and cut it into cubes.
  3. Whisk together lemon juice, minced garlic, olive oil, oregano, thyme, salt, and pepper in a bowl.
  4. Add the tofu cubes to the marinade and stir gently to coat. Let it marinate for at least 30 minutes.
  5. Spread the marinated tofu on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, flipping halfway until golden and crispy.
  7. Remove from oven and garnish with fresh herbs if desired.
  8. Serve in salads, bowls, wraps, or as a main dish.

Notes

Store any leftover baked tofu in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or skillet with a splash of oil or lemon juice.
