A vibrant salad with zesty lime and fresh cilantro that embodies the spirit of summer gatherings.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, combine quinoa and water (or vegetable broth); bring to a boil.
  2. Reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy and water is absorbed.
  3. Let the quinoa cool completely to room temperature.
  4. In a large bowl, combine cooked quinoa, chopped cilantro, lime juice, diced bell pepper, diced cucumber, and halved cherry tomatoes.
  5. Season with salt and pepper, and add olive oil if desired for a touch of richness.
  6. Toss everything together until well mixed, ensuring each component is coated in the zesty lime juice.
  7. Serve chilled or at room temperature and enjoy the refreshing flavors!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This salad tastes even better the next day.
