A rich and decadent chocolate mousse cake layered with fresh raspberries, perfect for impressing guests at any occasion.

  • 1 cup dark chocolate, chopped
  • 1/2 cup unsalted butter
  • 4 large eggs, separated
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup fresh raspberries
  • 1 tablespoon sugar (for raspberries)
  • 1/2 cup all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water.
  3. Beat the egg yolks and sugar together until pale and fluffy before adding in the melted chocolate and vanilla extract.
  4. Whip the heavy cream until soft peaks form, then fold it into the chocolate mixture.
  5. Beat the egg whites with a pinch of salt until stiff peaks form, then gently fold into the chocolate mixture.
  6. Add flour to the batter and fold in gently.
  7. Bake for about 25-30 minutes until a toothpick comes out clean.
  8. Allow the cake to cool completely in the pan.
  9. Prepare the raspberries by tossing them with sugar and letting them sit for 10 minutes.
  10. Assemble the cake with layers of mousse and raspberry filling, then chill until set.
  11. Serve chilled for an indulgent dessert experience.
