A comforting dish of Chicken Rogan Josh, fragrant with spices, served over fluffy rice, evoking warm memories from childhood.

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, pureed
  • 2 tablespoons ghee or oil
  • 2 teaspoons cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the ghee or oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in garlic and ginger, cooking until fragrant.
  4. Add the pureed tomatoes to the pan and cook for 5-7 minutes.
  5. Mix in coriander powder, turmeric, red chili powder, and salt.
  6. Add the chicken pieces, coating them well in the spices.
  7. Stir in the yogurt, cover the pan, and simmer for 25-30 minutes.
  8. Remove the cover, finish with garam masala, and stir.
  9. Serve hot with rice or naan.

Notes

For a vegetarian option, substitute chicken with eggplant or chickpeas. Use full-fat yogurt for a richer sauce.
