Delicious and comforting salmon patties that are quick to make and bursting with flavor.

Ingredients

  • 1 can (14.75 oz) salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 1/4 cup mayonnaise
  • 1 egg, beaten
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Combine Dry Ingredients: In a large bowl, combine the drained and flaked salmon, breadcrumbs, chopped onion, and bell pepper. Mix until these heartwarming ingredients are well blended.
  2. Add Creaminess: To the bowl, add mayonnaise, the beaten egg, Dijon mustard, garlic powder, and a sprinkle of salt and pepper. Stir until everything is combined, creating a lovely mixture that is moist yet firm enough to shape.
  3. Form Patties: With your hands, take portions of the mixture and form them into patties. Aim for about 2-3 inches in diameter. Place them aside on a plate; you should end up with around 8 patties.
  4. Heat the Oil: In a skillet, heat a generous amount of oil over medium heat. You want enough oil to cover the bottom of the pan well, allowing the patties to crisp beautifully.
  5. Cook the Patties: Carefully place the patties in the skillet, ensuring not to overcrowd the pan. Cook for 4-5 minutes on each side until they’re golden brown and crispy.
  6. Serve & Enjoy: Once cooked, transfer the patties onto a paper towel-lined plate to drain any excess oil. Serve them warm atop a fresh salad or with your favorite zesty sauce for dipping.

Notes

For a crunchier texture, use panko breadcrumbs instead of regular breadcrumbs. If desired, fresh herbs or jalapeños can be added for extra flavor.
