Savory Smash Burger Bowl

A healthy take on a classic smash burger served in a bowl with savory beef, caramelized onions, and fresh veggies.

Ingredients

  • 1 lb Ground Beef (or ground turkey or plant-based crumbles)
  • 4 medium Red Potatoes (or riced cauliflower for low-carb)
  • 1 medium Onion (diced, caramelized)
  • 1 cup Shredded Cheese (Colby Jack or pepper jack)
  • 1/2 cup Mayo (or Greek yogurt)
  • 1/4 cup Ketchup (low-sugar)
  • 1 tbsp Mustard (Dijon for a twist)
  • 1 tbsp Cajun Seasoning (adjust to taste)
  • 1 cup Pickles (or cucumbers)
  • 2 cups Lettuce (any mix of leafy greens)

Instructions

  1. Prep your ingredients by washing and dicing your red potatoes. If using riced cauliflower, prepare it for the bowl. Dice your onion for caramelizing later.
  2. Par-Cook the potatoes in boiling salted water for about 10 minutes, or until slightly tender. Drain and set aside.
  3. Caramelize the onions in a skillet over medium heat for 8-10 minutes, stirring occasionally until golden brown.
  4. Cook the ground beef (or alternative) in the skillet with Cajun seasoning for 5-7 minutes, breaking it apart until well-browned.
  5. Combine the par-cooked potatoes with the meat and onions, stirring gently and cooking together for 5-7 minutes.
  6. Melt the cheese over the mixture in the skillet, covering it for 1-2 minutes until bubbly.
  7. Assemble the bowl with a bed of lettuce, topped with the meat and potato mixture, and add pickles or cucumbers.
  8. Whisk together mayo, ketchup, and mustard in a small bowl, adjusting flavors to taste.
  9. Drizzle the sauce over the assembled bowl and serve immediately while hot.

Notes

Leftovers can be stored in an airtight container for up to 3 days in the fridge. Consider serving with a side of fresh fruit or sweet potato fries.
