Crockpot Cowboy Beans with Kielbasa

A hearty and comforting dish made with beans, kielbasa, and barbecue sauce, cooked slowly in a crockpot for maximum flavor.

Ingredients

  • 2 cups dried beans (such as pinto or kidney)
  • 1 pound kielbasa sausage, sliced
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 6 cups water or broth

Instructions

  1. Soak and rinse the beans overnight in water. Drain and set aside.
  2. Gather the soaked beans, sliced kielbasa, chopped bacon, diced onion, minced garlic, barbecue sauce, brown sugar, apple cider vinegar, smoked paprika, salt, and pepper in a crockpot.
  3. Pour in 6 cups of water or broth and stir to combine.
  4. Cover and cook on low for 6-8 hours until the beans are tender.
  5. Taste the dish and adjust seasoning if necessary.
  6. Serve warm and enjoy with family and friends.

Notes

Feel free to customize with different beans, add some heat with jalapeños, or use bacon alternatives for a lighter dish.
