Spinach Ricotta Brunch Bake

A comforting and delicious brunch bake made with creamy ricotta, fresh spinach, and melty mozzarella.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup bread cubes (optional)
  • Olive oil for greasing

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper in a mixing bowl.
  3. Incorporate the ricotta cheese into the egg mixture until well combined.
  4. Fold in the chopped spinach, and if using, toss in bread cubes.
  5. Pour the mixture into the greased baking dish and sprinkle mozzarella cheese on top.
  6. Bake for 30-35 minutes until set and golden brown.
  7. Cool slightly before serving.

Notes

Store leftovers in the fridge for up to 3 days. Can be reheated or enjoyed cold.
