A fresh and vibrant spring roll salad filled with crisp vegetables and a spicy ginger dressing for a light lunch or side dish.

Ingredients

  • Mixed greens
  • Bell peppers, sliced
  • Cucumber, sliced
  • Carrots, grated
  • Red cabbage, shredded
  • Fresh herbs (basil, mint)
  • Avocado, diced
  • Ingredients for Spicy Ginger Dressing:
  • Ginger, fresh and minced
  • Soy sauce
  • Lime juice
  • Honey
  • Sesame oil
  • Toasted sesame seeds

Instructions

  1. Combine the salad ingredients in a large bowl: mixed greens, sliced bell peppers, cucumber, grated carrots, and shredded red cabbage.
  2. Add in chopped fresh herbs, including basil and mint, along with diced avocado.
  3. Whisk the spicy ginger dressing ingredients together in a separate small bowl: minced ginger, soy sauce, lime juice, honey, and sesame oil.
  4. Drizzle the spicy ginger dressing over the salad and toss gently to combine.
  5. Garnish with toasted sesame seeds on top before serving.
  6. Enjoy! Serve your Spring Roll Salad immediately.

Notes

This salad can be stored in an airtight container in the fridge for up to 1 day. If the dressing is made separately, it can be refrigerated for up to a week.
