Strawberry Earthquake Cake

A delightful cake filled with creamy white chocolate and fresh strawberries, creating unforgettable flavors and beautiful presentations.

Ingredients

  • 1 box of strawberry cake mix
  • 1 cup of water
  • 1/3 cup of vegetable oil
  • 3 large eggs
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup white chocolate chips
  • 1 cup fresh strawberries, chopped
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix the strawberry cake mix, water, vegetable oil, and eggs until well combined.
  3. Pour half of the batter into the prepared baking dish.
  4. In another bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Spread the cream cheese mixture evenly over the batter in the baking dish.
  6. Pour the remaining cake batter on top, covering the cream cheese layer.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Let it cool before serving.

Notes

For best results, soften the cream cheese well and use fresh strawberries. Let the cake cool to see the unique ‘earthquake’ cracks.
