A vibrant summer dish featuring juicy shrimp, caramelized pineapple, and sweet chili sauce, perfect for grilling.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup pineapple chunks
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Garlic powder to taste
  • Salt and pepper to taste
  • Skewers (if grilling)

Instructions

  1. Prepare the Marinade: In a bowl, combine sweet chili sauce, soy sauce, lime juice, olive oil, garlic powder, salt, and pepper.
  2. Marinate the Shrimp and Pineapple: Add the shrimp and pineapple chunks to the marinade, ensuring everything is well-coated. Cover and marinate for at least 30 minutes.
  3. Preheat the Grill or Skillet: Get your grill or skillet nice and hot over medium heat.
  4. Assemble the Skewers: If using skewers, thread the marinated shrimp and pineapple onto them, alternating for a pleasing presentation.
  5. Grill to Perfection: Place the skewers on the grill or in the skillet. Grill for 2-3 minutes on each side until the shrimp are pink and cooked through.
  6. Serve and Garnish: Serve immediately, garnished with additional pineapple or lime if desired.

Notes

Pair with coconut rice or a crisp salad. Best enjoyed fresh.
