Ingredients

Scale
  • 34 pounds beef brisket
  • 2 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Heat the olive oil in a large Dutch oven over medium heat.
  3. Season the brisket generously with salt and pepper, then sear it until browned.
  4. Remove the brisket from the pot and set aside.
  5. Sauté the onions, garlic, carrots, and celery until softened, about 5-7 minutes.
  6. Stir in the beef broth, Worcestershire sauce, brown sugar, thyme, and rosemary.
  7. Return the seared brisket to the pot.
  8. Cover the pot and transfer it to the oven; cook for 3-4 hours or until fork-tender.
  9. Slice the brisket against the grain and serve.

Notes

Let the brisket rest before slicing to keep the juices inside. Pair with mashed potatoes or roasted vegetables.
