A comforting bowl of Yaki Udon noodles served with fresh vegetables and protein, perfect for a quick dinner or weekend feast.

Ingredients

  • Udon noodles
  • Vegetable oil
  • Soy sauce
  • Mirin
  • Sugar
  • Garlic (minced)
  • Ginger (minced)
  • Mixed vegetables (bell peppers, carrots, broccoli, etc.)
  • Protein of choice (chicken, shrimp, tofu, etc.)
  • Green onions (for garnish)

Instructions

  1. Cook the udon noodles according to package instructions and drain them well, setting aside for later.
  2. Heat vegetable oil in a large pan or wok over medium heat until shimmering.
  3. Add the minced garlic and ginger to the hot oil, sautéing for about a minute until fragrant.
  4. Toss in the mixed vegetables along with your choice of protein. Stir-fry until cooked through and vibrant in color.
  5. Add the cooked udon noodles to the pan, gently folding them into the mixture.
  6. Pour in the soy sauce, mirin, and sugar, ensuring everything is well-coated.
  7. Cook for an additional 2-3 minutes until everything is piping hot and well combined.
  8. Serve immediately, garnished with chopped green onions.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For added flavor, marinate the protein in soy sauce, garlic, and ginger before cooking.
