A vibrant salad featuring juicy blackberries, creamy avocado, and peppery arugula, all drizzled with a zesty dressing.

Ingredients

  • 4 cups arugula
  • 1 cup blackberries
  • 1 medium avocado
  • 1/4 cup thinly sliced red onion
  • 1/3 cup crumbled feta cheese
  • 1 small shallot
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 2 tablespoons chopped walnuts
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse and Dry the Arugula. Rinse the arugula and pat dry, then place it in a large serving bowl.
  2. Toss in the Blackberries. Gently toss in the blackberries.
  3. Prepare the Avocado. Peel and slice the avocado, then add it to the bowl.
  4. Slice the Shallot and Red Onion. Thinly slice the shallot and red onion, then mix them into the salad.
  5. Sprinkle the Feta Cheese. Sprinkle the crumbled feta cheese over the top.
  6. Whisk the Dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
  7. Drizzle the Dressing. Drizzle the dressing evenly over the salad.
  8. Finish with Walnuts. Finally, sprinkle the chopped walnuts on top and toss lightly to combine.
  9. Serve Immediately. Serve immediately to enjoy the freshness.

Notes

Storage tip: Store leftovers in an airtight container in the fridge for up to 2 days.
