A vibrant and refreshing salad featuring crisp shredded carrots and a light, zesty dressing of sesame oil, rice vinegar, and ginger.

Ingredients

  • 2 large carrots
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon grated ginger
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon black pepper

Instructions

  1. Peel the carrots using a vegetable peeler to remove the outer skin.
  2. Shred the carrots using a fine grater until they are thin strips.
  3. Assemble the grated carrots in a medium-sized bowl.
  4. Make the dressing by combining sesame oil, rice vinegar, and soy sauce in a small bowl.
  5. Sweeten the mixture with honey and stir until dissolved.
  6. Add grated ginger to the dressing.
  7. Dress the salad by pouring the dressing over the grated carrots.
  8. Toss the carrots gently to coat them evenly.
  9. Add sesame seeds over the salad for texture.
  10. Season with black pepper to enhance flavors.
  11. Add fresh cilantro on top.
  12. Final toss to mix thoroughly.
  13. Let the flavors meld for a few minutes before serving.
  14. Serve immediately or chill for up to an hour.

Notes
