A comforting dish of Cheesy Shrimp Alfredo Roll-Ups that combines creamy Alfredo sauce, shrimp, and spinach wrapped in tortillas.

Ingredients

Scale
  • 8 large flour tortillas
  • 2 cups cooked shrimp, peeled and deveined
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen spinach, thawed and drained
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat and sauté the garlic for about 1 minute.
  3. Add the cooked shrimp to the skillet and stir to combine, cooking for 2-3 minutes until heated through.
  4. Combine the shrimp mixture, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, thawed spinach, and Italian seasoning in a large bowl, mixing well and seasoning with salt and pepper.
  5. Fill each tortilla with a generous spoonful of the shrimp mixture, rolling it up tightly from the bottom.
  6. Prepare a baking dish by pouring a thin layer of Alfredo sauce in the bottom to prevent sticking and arrange the rolled tortillas seam-side down.
  7. Pour the remaining Alfredo sauce over the top of the tortillas.
  8. Sprinkle the remaining mozzarella cheese evenly over the sauce.
  9. Bake covered with aluminum foil for 20 minutes, then uncover and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  10. Cool for a few minutes and garnish with fresh parsley before serving.

Notes

Ensure spinach is well-drained to prevent soggy tortillas. Feel free to substitute shrimp with chicken or vegetables for a different version.
