Delicious muffins that capture the essence of cinnamon rolls while being packed with protein and nutrients.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup protein powder (vanilla or cinnamon flavor)
  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond milk (or any milk of your choice)
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/4 cup raisins or golden raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with cooking spray.
  2. In a large mixing bowl, combine the rolled oats, protein powder, baking powder, ground cinnamon, and salt. Stir well to ensure all dry ingredients are evenly mixed.
  3. In another bowl, whisk together the unsweetened applesauce, almond milk, eggs, and honey (or maple syrup) until well combined.
  4. Pour the wet ingredients into the bowl with the dry ingredients and gently fold them together until just mixed. Be careful not to overmix; the batter should be slightly lumpy.
  5. If you’re using them, fold in the chopped nuts and raisins gently into the batter for an extra layer of texture and flavor.
  6. Divide the batter evenly among the muffin tin, filling each cup about 3/4 full for perfect rise and texture.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy your muffins warm or store them in an airtight container in the fridge for up to a week.

Notes

These muffins can be customized with different add-ins like dark chocolate chips or chopped apples.
