Ingredients

Scale
  • 1 whole chicken (about 4–5 pounds)
  • 2 cups fresh or frozen cranberries
  • 1/2 cup pure maple syrup
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 onion, quartered
  • 3 cloves garlic, minced
  • Zest of 1 orange
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the cranberries, maple syrup, melted butter, Dijon mustard, apple cider vinegar, salt, black pepper, thyme, rosemary, minced garlic, and orange zest in a bowl.
  3. Pat the chicken dry and place it in a roasting pan.
  4. Pour half of the cranberry mixture over the chicken and rub it into the skin.
  5. Stuff the onion into the cavity of the chicken.
  6. Roast for about 1 hour to 1 hour and 15 minutes until the internal temperature reaches 165°F (75°C).
  7. Glaze the chicken with the remaining cranberry mixture about 15 minutes before it’s done.
  8. Remove the chicken from the oven and let it rest for 10-15 minutes.
  9. Carve the chicken, garnish with fresh parsley, and serve warm with the roasted cranberries and sauce.

Notes

Make sure to dry the chicken properly for crispy skin. Consider marinating overnight for deeper flavors.
