Creamy Garlic Scallops

A gourmet dish featuring perfectly seared scallops in a rich and creamy garlic sauce, ideal for special occasions or a cozy night in.

Ingredients

  • 400 g (14 oz) extra-large king scallops (about 10–12)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1½ tbsp avocado oil
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • ¼ tsp chili flakes (red pepper flakes)
  • â…“ cup (80 ml) white wine
  • ½ cup (120 ml) double (heavy) cream
  • 1 tbsp lemon juice
  • 1 tbsp capers in brine, drained
  • 4 tbsp finely chopped fresh parsley
  • Lemon wedges (for serving)
  • Freshly ground black pepper (for serving)

Instructions

  1. Prepare the scallops by removing them from the fridge 15 minutes before cooking. Place them on a tray lined with paper towels, pat dry, and let sit for 10 minutes.
  2. Season the scallops with salt and black pepper on both sides after removing the top layer of paper towel.
  3. Sear the scallops in a large skillet with heated avocado oil over high heat for 3–4 minutes until golden; flip and add butter, cooking for another 60–90 seconds.
  4. Make the sauce by sautéing garlic and chili flakes in the pan for 30 seconds, then adding white wine and reducing for 1–2 minutes.
  5. Add cream, lemon juice, and capers, then simmer for 1 minute before returning scallops to warm through in the sauce.
  6. Serve immediately with lemon wedges and a touch of black pepper.

Notes

Serve with a simple arugula salad or over fluffy risotto. Best enjoyed immediately for freshness.
