A comforting dish of juicy chicken topped with zesty salsa, creamy queso dip, and melted cheddar cheese, perfect for family gatherings.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup salsa (your choice of mild or spicy)
  • 1 cup queso dip (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional: sliced jalapeños for added spice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper.
  3. Pat the chicken breasts dry and rub the spice blend over both sides.
  4. Sear the chicken in a large oven-safe skillet with olive oil for about 3-4 minutes on each side.
  5. Pour the salsa evenly over the chicken breasts.
  6. Spoon the queso dip over the salsa-covered chicken.
  7. Sprinkle the shredded cheddar cheese on top.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes.
  9. Remove from the oven and let it rest for about 5 minutes.
  10. Garnish with chopped cilantro and jalapeños before serving.

Notes

For extra flavor, marinate the chicken in the spice blend for a few hours or overnight.
