Herb and Garlic Marinated Olives

A vibrant mix of marinated olives infused with garlic and herbs, perfect for any gathering.

Ingredients

Scale
  • 2 cups pitted Italian green olives
  • 1 cup pitted Kalamata olives
  • 4 oz Parmesan cheese, cut into 1/4” cubes
  • 3 garlic cloves, smashed
  • 1/2 tablespoon whole black peppercorns
  • 1 large sprig fresh rosemary
  • 1 large sprig fresh thyme
  • 3/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Juice of 1/2 lemon

Instructions

  1. Combine ingredients in a Ziplock bag.
  2. Add the marinade.
  3. Seal and mix.
  4. Refrigerate and marinate.
  5. Let it rest.
  6. Serve in style.

Notes

Use high-quality olive oil for the best flavor. Feel free to experiment with different herbs.
