Garlic Parmesan Chicken Meatloaf

A comforting meatloaf packed with garlic and Parmesan, offering a lighter twist on the classic dish.

Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup garlic powder (for seasoning on top)
  • 1/4 cup additional grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Combine the ground chicken, breadcrumbs, 1/2 cup grated Parmesan cheese, mozzarella, parsley, garlic, and onion in a large mixing bowl.
  3. Whisk together the eggs, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper in a separate bowl.
  4. Pour the egg mixture into the chicken mixture and mix gently until combined.
  5. Transfer the mixture onto the prepared baking sheet or into the loaf pan and shape it into a loaf.
  6. Mix garlic powder and additional Parmesan cheese, sprinkle it on top of the meatloaf.
  7. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let it rest for 10 minutes before slicing.
  9. Serve warm with your favorite sides.

Notes

This meatloaf can be made ahead of time and stored in the fridge or freezer for later use.
