Ingredients

Scale
  • 1½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ cup cornstarch
  • ½ cup all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • 2 large egg whites
  • ½ cup vegetable or canola oil
  • ? cup hoisin sauce
  • ? cup rice vinegar
  • ? cup low-sodium soy sauce
  • ¼ cup light brown sugar, packed
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger (or 1 tablespoon fresh minced ginger)
  • ½ teaspoon crushed red pepper flakes, or more to taste
  • 1½ teaspoons cornstarch

Instructions

  1. Prepare the Sauce: In a bowl, whisk together the hoisin sauce, rice vinegar, soy sauce, brown sugar, garlic, ginger, red pepper flakes, and cornstarch until smooth. Set aside.
  2. Make the Coating: In a large zip-top bag, combine the cornstarch, flour, salt, and pepper. In a separate bowl, whisk the egg whites until frothy.
  3. Coat the Chicken: Add the chicken pieces to the egg whites, tossing to coat. Let excess drip off and transfer to the bag. Seal and shake until coated.
  4. Fry the Chicken: Heat oil in a large skillet over medium-high heat. Fry chicken pieces in batches for 2-3 minutes on each side until golden brown. Transfer to paper towels.
  5. Add the Sauce: In the same skillet, pour in the prepared sauce, simmering over medium heat. Stir constantly until thickened.
  6. Combine and Serve: Return fried chicken to the sauce, tossing until well coated. Serve immediately over rice, garnished with green onions.

Notes

Ensure the oil is hot enough before frying for crispy chicken. Leftovers can be stored in an airtight container for up to 3 days.
