A delightful and flavorful recipe for Greek meatballs infused with zesty lemon and fragrant herbs, perfect for family dinners.

Ingredients

  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground meat, breadcrumbs, Parmesan, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  2. Form the Meatballs: Scoop out portions of the mixture and roll them into small meatballs, about 1 inch in diameter.
  3. Brown the Meatballs: In a large skillet, heat olive oil over medium heat. Add the meatballs, cooking until browned on all sides, about 6-8 minutes.
  4. Create the Lemon Sauce: In a separate bowl, mix together chicken broth, lemon juice, and cornstarch. Pour this mixture over the browned meatballs in the skillet.
  5. Simmer to Perfection: Bring the skillet to a gentle simmer and cook for an additional 10-15 minutes.
  6. Serve and Enjoy: Serve the meatballs hot, either with a fresh salad or atop a bed of warm rice.

Notes

For extra flavor, consider adding mint to the meat mixture or pairing with tzatziki sauce.
