A hearty delight combining gooey cheeses, savory deli meats, and vibrant roasted red peppers, elevating the classic grilled cheese sandwich.

Ingredients

  • 4 slices of sourdough bread
  • 1 tablespoon of unsalted butter, softened
  • 2 cups of shredded mozzarella cheese
  • 1 cup of shredded provolone cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/2 pound of thinly sliced deli meats (such as salami, capicola, or turkey)
  • 1/2 cup of roasted red peppers, sliced
  • 1/4 cup of mayonnaise
  • 1 tablespoon of Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Slice sourdough bread if not pre-sliced and thinly slice roasted red peppers.
  2. Mix the cheeses: Combine mozzarella, provolone, and Parmesan in a bowl.
  3. Season the mayonnaise: Spread mayonnaise on one side of each bread slice and sprinkle Italian seasoning.
  4. Layer the first sandwich: On the unspread side of two bread slices, layer half of the cheese mixture.
  5. Add deli meats: Spread chosen deli meats over the cheese.
  6. Add the roasted red peppers: Layer sliced roasted red peppers on top of the deli meats.
  7. Top with remaining cheese mixture and place the other two slices of bread on top, mayonnaise side up.
  8. Preheat the skillet over medium heat.
  9. Grill the sandwiches for about 3-4 minutes until golden brown.
  10. Flip the sandwiches and cook another 3-4 minutes until both sides are golden and the cheese melts.
  11. Rest the sandwiches for a minute before slicing in half.
  12. Serve with dipping sauces like marinara or basil pesto.

Notes

For best results, use fresh, high-quality ingredients. Experiment with different cheeses or add extra vegetables for variations.
