Ingredients

Scale
  • 4 chicken thighs
  • 2 tablespoons gochujang
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon black pepper
  • 2 cups green cabbage, finely shredded
  • 1 cup carrots, julienned
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon sriracha (optional)
  • 4 brioche burger buns
  • Cilantro and sesame seeds for garnish

Instructions

  1. Create the flavorful marinade by combining gochujang, soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, and black pepper in a bowl.
  2. Marinate the chicken thighs in a resealable bag or bowl with the marinade, letting it sit in the refrigerator for at least 1 hour.
  3. Prepare the crispy slaw by mixing shredded cabbage and julienned carrots in a large bowl.
  4. Whisk together mayonnaise, lime juice, and sriracha, then pour over the cabbage and carrots, mixing until well coated.
  5. Preheat a grill pan or skillet over medium-high heat, adding some oil to prevent sticking.
  6. Grill the marinated chicken for 6-7 minutes per side, or until cooked through and charred.
  7. Allow the chicken to rest for a few minutes before slicing into strips.
  8. Toast the brioche buns until golden brown.
  9. Assemble the sandwiches by placing chicken on the bottom bun, topping with crispy slaw, cilantro, and sesame seeds.
  10. Serve immediately with your favorite sides.

Notes

Marinate the chicken overnight for enhanced flavor. Substitute gochujang if necessary and feel free to use different proteins or vegetables.
