A classic Italian dish featuring linguine pasta in a rich clam sauce, enhanced with garlic, olive oil, and a hint of lemon.

Ingredients

Scale
  • Salt, for pasta water and seasoning
  • 5 garlic cloves, finely minced
  • Pinch of red chili flakes
  • 2 tablespoons olive oil
  • ¼ cup dry white wine
  • 20 littleneck clams, purged and scrubbed clean
  • 6.5 ounces canned chopped clams (1 can)
  • 1 cup bottled clam juice
  • ½ lb linguine (bronze die-cut if possible)
  • Juice of 1 lemon
  • 8 tablespoons unsalted butter, cold and cut into cubes
  • ¼ cup fresh parsley, finely chopped, divided

Instructions

  1. Bring a large pot of water to a boil and season generously with salt.
  2. In a medium saucepan, heat olive oil over medium heat and sauté garlic and chili flakes for about 2 minutes until fragrant.
  3. Add the white wine and fresh clams to the saucepan. Cover and cook until the clams just start to open, about 5 minutes.
  4. Remove the clams with a slotted spoon, place them in a bowl, and keep covered to stay warm.
  5. Drain the liquid from the canned clams and add it to the pan along with the bottled clam juice. Simmer until the liquid reduces by about two-thirds, approximately 5 minutes.
  6. Add the linguine to the boiling water and cook until al dente, about 8-10 minutes.
  7. When the pasta has 2-3 minutes left to cook, reduce the sauce heat to low and stir in the canned clams and lemon juice.
  8. Gradually add cold butter cubes, stirring constantly until fully incorporated.
  9. Taste and adjust seasoning with salt if needed; stir in half of the chopped parsley.
  10. Drain the pasta and toss it in the pan with the sauce, ensuring it’s well coated.
  11. Transfer to serving bowls, arrange the reserved clams, and sprinkle with the remaining parsley.

Notes

Serve with a crisp green salad or garlic bread for a complete meal.
