A vibrant and flavorful Mediterranean Chicken Stir Fry that combines tender chicken, crisp vegetables, and aromatic spices for a delightful and nourishing meal.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 zucchinis, sliced into half-moons
  • 2 cups fresh spinach leaves
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes, halved
  • Juice of 1 lemon
  • Feta cheese, crumbled (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken: In a large bowl, season the chicken pieces with salt, pepper, paprika, dried oregano, and dried basil. Toss the chicken to ensure it is evenly coated with the seasonings.
  2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the seasoned chicken pieces. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté the Onions: In the same skillet, add the remaining tablespoon of olive oil. Once heated, add the sliced onion and cook for 2-3 minutes, until it begins to soften.
  4. Add the Bell Peppers: Add the sliced red and yellow bell peppers to the skillet. Stir-fry for an additional 2-3 minutes until they are slightly tender but still vibrant in color.
  5. Incorporate the Zucchini and Garlic: Next, add the sliced zucchinis and minced garlic to the skillet. Stir-fry for another 3 minutes until the zucchinis are tender.
  6. Combine Everything: Return the cooked chicken to the skillet, along with the fresh spinach leaves and halved cherry tomatoes. Toss everything together to combine and cook for an additional 2-3 minutes until the spinach wilts and the tomatoes soften slightly.
  7. Finish with Lemon Juice: Squeeze the juice of one lemon over the stir fry and give it a final stir to mix all the flavors together.
  8. Serve and Garnish: Serve the Mediterranean chicken stir fry hot, garnished with crumbled feta cheese and chopped fresh parsley.
