Honey Roasted Carrots with Thyme

A stunning side dish featuring roasted carrots kissed with honey and thyme, perfect for enhancing any meal.

Ingredients

  • 1 pound of carrots, peeled and cut into sticks or rounds
  • 2 tablespoons of olive oil
  • 2 tablespoons of honey
  • 1 teaspoon of fresh thyme leaves, plus more for garnish
  • Salt and pepper to taste
  • 1 tablespoon of balsamic vinegar (optional)
  • 1 tablespoon of butter (optional for extra richness)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Combine the peeled and cut carrots in a large bowl.
  3. Drizzle the olive oil and honey over the carrots, and sprinkle with fresh thyme, salt, and pepper. If using, add the balsamic vinegar for additional flavor.
  4. Toss the carrots thoroughly until they are evenly coated with the olive oil and honey mixture.
  5. Spread the carrots in a single layer on the prepared baking sheet, ensuring space between each piece for even roasting.
  6. Roast the carrots in the preheated oven for 20-25 minutes or until they are tender and caramelized, stirring halfway through for even cooking.
  7. Add the butter during the last 5 minutes of roasting for a richer flavor (if using).
  8. Remove the baking sheet from the oven. Taste and adjust seasoning with more salt and pepper, if desired.
  9. Garnish with additional thyme leaves before serving, and enjoy warm as a delightful side dish.

Notes

Carrots can be cut into similar sizes for even cooking. Feel free to substitute honey with maple syrup for a vegan option.
