Ingredients

Scale
  • 200 g fresh ramen noodles
  • 200 g flank steak
  • 3 cups chicken stock
  • 2 tablespoons gochujang
  • 1 tablespoon gochugaru
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon cornstarch
  • 1 tablespoon cold water
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1 stalk green onion, sliced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon sesame seeds
  • 2 sprigs cilantro

Instructions

  1. Prepare the flank steak: Slice flank steak thinly across the grain and season with salt, black pepper, and half of the sesame oil.
  2. Sear the steak: Heat vegetable oil in a grill pan over medium-high heat. Cook steak slices for 2 minutes per side until they reach a lovely medium doneness. Remove from the pan and set aside to rest.
  3. Sauté garlic and ginger: In a pot, heat the remaining sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
  4. Build the broth base: Stir in gochujang, gochugaru, soy sauce, and sugar. Let it cook for another minute, allowing those flavors to meld before pouring in the chicken stock. Bring everything to a gentle simmer.
  5. Thicken the broth: In a small bowl, mix cornstarch with cold water to form a slurry. Whisk this into the simmering broth until it thickens slightly.
  6. Add cream and seasoning: Stir in the heavy cream and adjust the seasoning with salt and black pepper to taste.
  7. Cook the ramen noodles: In a separate pot, cook the ramen noodles according to package instructions. Once they’re perfectly cooked, drain and divide them into serving bowls.
  8. Assemble the dish: Pour the creamy, spicy broth over the ramen noodles. Top with the grilled beef slices, sliced green onion, sesame seeds, and fresh cilantro.

Notes

Store broth separate from noodles if you have leftovers. The soup keeps well in the fridge for up to 3 days.
