A delightful bowl featuring tender chicken, charred sweet corn, and vibrant flavors, perfect for any gathering.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 1 cup corn kernels
  • ½ cup mayonnaise
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 lime
  • ? cup cotija cheese
  • ½ cup black beans
  • 2 tablespoons cilantro
  • Salt to taste
  • Pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine the olive oil, chili powder, smoked paprika, garlic powder, lime zest from half the lime, salt, and pepper. Add in the chicken breasts and toss well to coat.
  2. Sear the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken breasts and cook for about 6–7 minutes on each side until they’re golden brown and the internal temperature reaches 165°F. Remove from the skillet and let them rest before slicing.
  3. Char the Corn: In the same skillet, toss in the corn kernels. Sauté until they are lightly charred, which should take about 4 minutes. Then stir in the mayonnaise, a squeeze of the remaining lime juice, and a pinch of chili powder for that extra kick.
  4. Warm the Black Beans: Heat the black beans in a small pan or microwave until they’re warmed through.
  5. Assemble Your Bowls: To assemble, divide your cooked rice among the bowls. Top each bowl with black beans, the sliced chicken, and the street corn mixture.
  6. Garnish and Serve: Sprinkle with crumbled cotija cheese and chopped cilantro. Serve with lime wedges for that refreshing zing at the end!

Notes

Marinate the chicken for at least 30 minutes for juiciness. Feel free to substitute ingredients for variations, such as jackfruit for a vegetarian option.
