Ingredients

Scale
  • 3 lb pork shoulder, trimmed and sliced into thin, wide pieces
  • 4 pineapple spears
  • 6 guajillo chiles, seeds and veins removed
  • 1 chile de árbol
  • 5 garlic cloves
  • ¼ onion
  • 10 whole black peppercorns
  • 1 teaspoon Mexican oregano
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • 2 packets Sazon Goya or 1 tablespoon ground achiote powder
  • 1 ½ teaspoons kosher salt
  • ¼ cup apple cider vinegar
  • ¼ cup pineapple juice or orange juice
  • 15 corn tortillas (white or yellow)
  • ½ cup pickled red onion or chopped red/white onion
  • ½ cup fresh chopped cilantro
  • Lime wedges
  • Creamy avocado salsa (optional)

Instructions

  1. Prepare the pork: Trim fat from the pork shoulder and slice into ¼-inch thick strips.
  2. Soften the chiles: Boil guajillo and árbol chiles in water for 15 minutes until softened.
  3. Make the marinade: Blend softened chiles with garlic, onion, spices, vinegar, and juice until smooth.
  4. Marinate the pork: Coat pork with the marinade and refrigerate for several hours or overnight.
  5. Grill the pork: Grill the marinated pork for a few minutes per side until cooked to an internal temperature of 145°F (63°C).
  6. Grill the pineapple: Grill pineapple spears for 1–2 minutes per side until caramelized, then chop.
  7. Assemble tacos: Warm tortillas, then fill with pork, pineapple, onion, cilantro, and a squeeze of lime.

Notes

For maximum flavor, let the pork marinate overnight. Pair with Mexican street corn or a refreshing salad.
