Jalapeño Popper Eggrolls Bacon-Wrapped Bites

Delicious bacon-wrapped eggrolls filled with a spicy jalapeño and cheese mixture, perfect for any occasion.

Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 3 whole jalapeños, seeded and diced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 12 sheets egg roll wrappers
  • 12 strips bacon
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper or foil.
  2. In a bowl, combine cream cheese, cheddar cheese, green onions, jalapeños, garlic powder, salt, and black pepper until smooth.
  3. Lay one egg roll wrapper on a clean surface and place about 2 tablespoons of filling in the center.
  4. Fold the bottom corner of the wrapper over the filling, tuck in the sides, and roll up tightly, sealing the top edge with a little water.
  5. Wrap one bacon strip around each filled egg roll, securing the ends underneath.
  6. Brush each bacon-wrapped bite with vegetable oil.
  7. Place the bites seam-side down on the prepared baking sheet and bake for 20 to 25 minutes, or until bacon is crisp and wrappers are golden brown.
  8. Remove from the oven and let cool for 5 minutes before serving.

Notes

These bites can be frozen before baking and cooked from frozen. Use wonton wrappers if egg roll wrappers are unavailable.
