A warm and cheesy Beef Enchilada Casserole layered with savory ground beef, soft corn tortillas, and melted cheese, perfect for family gatherings.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 ounces red enchilada sauce, divided
  • 4 corn tortillas
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Sauté the onion until softened, about 3 minutes.
  4. Add minced garlic and cook for 1 minute.
  5. Brown the ground beef in the skillet until fully cooked.
  6. Season the beef mixture with chili powder, cumin, salt, and pepper.
  7. Simmer the beef mixture with half of the enchilada sauce for 2 minutes.
  8. Spread a layer of the remaining enchilada sauce in the bottom of a baking dish.
  9. Layer four corn tortillas, tearing them if necessary to fit.
  10. Add half of the beef mixture and sprinkle with cheddar cheese.
  11. Repeat with the remaining tortillas, beef, and cheese.
  12. Pour the remaining enchilada sauce on top.
  13. Bake uncovered for 20 minutes until cheese is melted and bubbly.
  14. Let stand for 5 minutes before slicing.

Notes

You can prep the casserole ahead and bake it from the fridge, adding 5–10 minutes to the baking time.
