A wholesome and delicious breakfast bake featuring creamy cottage cheese and juicy blueberries, perfect for lazy Sunday mornings.

Ingredients

  • 1 ½ cups cottage cheese
  • 1 ½ cups rolled oats
  • ½ cup milk
  • ¼ cup honey
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish with butter or cooking spray.
  3. Combine the cottage cheese, rolled oats, milk, honey, baking powder, cinnamon, and salt in a large mixing bowl.
  4. Whisk the mixture until smooth and well combined.
  5. Crack the eggs into the bowl, then add the vanilla extract.
  6. Beat the eggs into the mixture until well incorporated.
  7. Fold in the fresh blueberries gently.
  8. Pour the mixture into the prepared baking dish, spreading it evenly.
  9. Dot the top with small pieces of butter.
  10. Bake for about 35 to 40 minutes, or until golden brown.
  11. Cool for 5 minutes before slicing and serving.

Notes

This dish pairs well with maple syrup or Greek yogurt. Leftovers can be stored in an airtight container for up to 5 days.
