Blueberry Swirl Yogurt Bites

Delightful frozen yogurt bites swirled with fresh blueberries, perfect for a snack or dessert.

Ingredients

  • 1 cup fresh or frozen blueberries
  • 2 tablespoons granulated sugar or honey (adjust to taste)
  • 1 tablespoon water
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cornstarch mixed with 1 tablespoon cold water (optional, for thicker swirl)
  • 2 cups Greek yogurt, plain or vanilla (full-fat or 2% recommended for creaminess)
  • 23 tablespoons honey or maple syrup, to taste
  • 1 teaspoon pure vanilla extract (omit if using vanilla yogurt)
  • 1 small pinch fine sea salt
  • 1/2 cup granola or crushed digestive biscuits/graham crackers (optional, for crunch)
  • 2 tablespoons finely chopped nuts (almonds, pistachios, pecans, or walnuts; optional)
  • 12 tablespoons shredded coconut, unsweetened or lightly sweetened (optional)
  • Nonstick cooking spray or neutral oil for greasing molds (if using silicone, not strictly needed)
  • Silicone mini muffin pan, silicone candy molds, or a parchment-lined baking tray

Instructions

  1. Prepare the Blueberry Swirl: In a small saucepan, combine blueberries, sugar or honey, and water. Set over medium heat and cook, stirring occasionally, until the berries begin to burst, about 5–7 minutes. Gently mash some of the berries and stir in the lemon juice. If desired, stir in the cornstarch slurry to thicken. Let it cool completely.
  2. Prepare the Yogurt Base: In a medium mixing bowl, combine Greek yogurt, honey or maple syrup, vanilla extract, and salt. Whisk until smooth and creamy, adjusting sweetness as needed.
  3. Prepare the Molds or Tray: If using silicone molds, place them on a baking sheet for stability. Lightly grease with nonstick spray or oil. If using a baking tray, line it with parchment paper.
  4. Optional Crunchy Base: In a small bowl, combine granola, crushed biscuits, chopped nuts, and shredded coconut if using. Mix in melted coconut oil or butter if desired and add about 1 teaspoon to each mold, pressing down gently.
  5. Swirl the Blueberry into the Yogurt: Once the blueberry sauce is cool, add half to the yogurt and fold gently to create swirls. Reserve the remaining sauce.
  6. Fill the Molds: Spoon the swirled yogurt into molds, adding dollops of reserved blueberry sauce on top. Use a toothpick to swirl.
  7. Freeze the Yogurt Bites: Freeze until firm, at least 3–4 hours. Carefully unmold or cut into squares.
  8. Serve: Let the yogurt bites sit at room temperature for 3–5 minutes before serving. Optionally drizzle with honey and garnish with fresh blueberries or mint.
