A creamy one-pan dish featuring orzo pasta, juicy chicken, and vibrant veggies that can be effortlessly made for a comforting dinner.

Ingredients

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, roughly chopped
  • 8 ounces Boursin cheese (any flavor)
  • 3 cups chicken broth
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large, oven-safe skillet over medium heat. Add the chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes until browned and cooked through.
  3. Add the broccoli florets, cherry tomatoes, and spinach to the pan. Stir to combine and cook for an additional 2-3 minutes until just tender.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Stir in the orzo pasta and dollop in the Boursin cheese, combining until mostly melted.
  6. Remove from heat and sprinkle shredded mozzarella on top.
  7. Transfer to the preheated oven and bake for 20-25 minutes until the cheese is bubbly and golden brown.
  8. Let cool for a few minutes and garnish with fresh parsley before serving.

Notes

For best results, reheat in the oven or microwave. Store leftovers in an airtight container for 3-4 days.
