A delightful twist on classic desserts, this Brownie Fruit Pizza combines fudgy brownies with a creamy topping and vibrant fresh fruits.

Ingredients

  • 200 g unsalted butter
  • 200 g dark chocolate, chopped
  • 200 g granulated sugar
  • 3 pcs eggs
  • 100 g all-purpose flour
  • 30 g cocoa powder
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 180 g cream cheese, softened
  • 50 g powdered sugar
  • 1 tsp lemon juice
  • 100 g strawberries, sliced
  • 100 g kiwi, sliced
  • 50 g blueberries

Instructions

  1. Preheat the oven to 180°C and line a 23 cm round pizza pan with parchment paper.
  2. Melt the butter and dark chocolate together in a heatproof bowl over simmering water, stirring until smooth.
  3. Whisk the sugar and eggs until light and frothy, then stir in the melted chocolate mixture.
  4. Combine the flour, cocoa powder, and salt over the mixture and fold gently until just combined, then stir in the vanilla extract.
  5. Bake the brownie batter for 20–25 minutes until a skewer comes out with a few moist crumbs.
  6. Cool the brownie completely in the pan, then transfer it to a serving platter.
  7. Prepare the cream cheese topping by beating the cream cheese, powdered sugar, and lemon juice together until smooth. Spread evenly over the brownie.
  8. Arrange the sliced strawberries, kiwi, and blueberries on top of the cream cheese layer in a circular pattern.

Notes

Store any leftovers covered in the fridge for up to 3 days. For a different flavor, try using mascarpone or Greek yogurt instead of cream cheese.
