A healthier twist on classic Caesar dressing made with Greek yogurt, offering a luscious creaminess and tangy flavor.

Ingredients

  • 1 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 clove garlic, minced
  • 1 teaspoon anchovy paste (or 2 anchovy fillets, minced)
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • 12 tablespoons water (optional, for thinning)

Instructions

  1. Whisk together the Greek yogurt and mayonnaise in a medium mixing bowl until smooth and creamy.
  2. Add the Dijon mustard, red wine vinegar, and Worcestershire sauce, whisking to incorporate fully.
  3. Add the minced garlic and anchovy paste (or anchovy fillets), stirring until well combined.
  4. Gradually mix in the freshly grated Parmesan cheese until evenly distributed.
  5. Taste the dressing and season with salt and black pepper as desired.
  6. If a thinner consistency is preferred, add water one tablespoon at a time, whisking until the desired texture is achieved.
  7. Transfer the dressing to an airtight container and refrigerate for at least 30 minutes to allow flavors to meld.
  8. Serve over greens or use as a dip for vegetables.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. Stir before using.
