Chicken Caprese Flatbread

A delightful combination of tender chicken, juicy cherry tomatoes, and creamy mozzarella, all drizzled with balsamic glaze, perfect for weeknight dinners or gatherings.

Ingredients

  • 2 pieces flatbread
  • 1 cup shredded cooked chicken
  • 1 cup halved cherry tomatoes
  • 1 cup sliced fresh mozzarella
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the olive oil, minced garlic, salt, and pepper in a small bowl.
  3. Place the flatbreads on the prepared baking sheet and brush them with the garlic oil mixture.
  4. Top each flatbread with shredded chicken, halved cherry tomatoes, and slices of fresh mozzarella.
  5. Bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
  6. Drizzle the balsamic glaze over each flatbread right after removing from the oven.
  7. Sprinkle chopped fresh basil on top before slicing and serving.

Notes

Pair with a simple side salad or roasted vegetables for a complete meal. Store leftovers in an airtight container for up to 2 days.
