6 slices bacon
4 cups corn kernels (fresh or frozen)
1/2 cup chopped onion
2 cloves garlic, minced
1 cup shredded cheddar cheese
1/2 cup heavy cream
2 tablespoons unsalted butter
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
Crisp the bacon by cooking it in a skillet over medium heat until crisp, then transfer to a paper towel–lined plate to drain.
Chop the cooled bacon and reserve the bacon fat in the skillet.
Place chopped bacon, bacon fat, corn, onion, garlic, butter, garlic powder, onion powder, salt, pepper, and heavy cream into the slow cooker and stir to combine.
Cover and cook on low for 2 to 3 hours, stirring once halfway through cooking.
Stir in the shredded cheddar cheese about 30 minutes before serving until melted and evenly distributed.
Garnish with chopped fresh parsley before serving.
Notes
For quicker preparation, feel free to use pre-cooked bacon. This dish can also be modified for a vegan version.
