  • 2 cups shredded Monterey Jack cheese
  • 2 chicken breasts
  • 3 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons hot honey
  • 4 large tortillas
  • 2 tablespoons butter
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 jalapeño, chopped
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Make the Spicy Jalapeño Cream Sauce: In a bowl, combine sour cream, mayonnaise, chopped jalapeño, lime juice, minced garlic, salt, and cayenne pepper. Stir well and refrigerate.
  2. Marinate the Chicken: In another bowl, whisk olive oil, chili powder, garlic powder, smoked paprika, salt, black pepper, and hot honey. Add chicken breasts and let marinate for 10 minutes.
  3. Cook the Chicken: Heat a skillet over medium-high heat and cook the marinated chicken for 6-7 minutes on each side until cooked through. Remove and slice thinly.
  4. Prepare the Skillet: Wipe the skillet, reduce heat to medium-low, add butter, and let it melt.
  5. Assemble the Quesadillas: Place one tortilla in the skillet, sprinkle half of the cheeses, top with sliced chicken, and cover with another tortilla.
  6. Cook the Quesadillas: Cook for 2-3 minutes on each side until the tortillas are golden and cheese is melted.
  7. Slice and Repeat: Transfer quesadilla to a cutting board, slice into wedges, and repeat with remaining tortillas.
  8. Serve with the Spicy Jalapeño Cream Sauce on the side for dipping.

Notes

For optimal flavor, marinate chicken overnight if possible. Consider using different cheese varieties if desired.
