  • 1/2 cup mayonnaise

  • 2 tbsp chopped green onions
  • 1/4 cup bacon bits
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Blanch the Corn: If using fresh corn, blanch kernels in boiling water for 2 minutes, then drain and cool. If using frozen corn, simply thaw and drain excess water.
  2. Prepare the Dressing: In a large bowl, whisk together mayonnaise, sour cream, granulated sugar, apple cider vinegar, salt, and black pepper until the mixture is smooth and creamy.
  3. Combine the Ingredients: Gently fold in the corn kernels, diced red bell pepper, chopped green onions, bacon bits, and fresh cilantro. Ensure everything is evenly coated in that luscious dressing.
  4. Chill the Salad: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This waiting period allows all the flavors to meld together beautifully.
