Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound the chicken breasts to an even thickness of about 1/2 inch.
  3. Mix together the Parmesan cheese, panko breadcrumbs, garlic powder, salt, and black pepper.
  4. Place flour on a separate plate, ready for dredging the chicken.
  5. Whisk together eggs and milk in another shallow dish.
  6. Dredge each chicken breast in flour, shaking off the excess.
  7. Dip the floured chicken in the egg mixture, allowing any excess to drip off.
  8. Coat the chicken in the Parmesan breadcrumb mixture, pressing to adhere.
  9. Sauté in a large oven-safe skillet with olive oil over medium-high heat until golden.
  10. Transfer the skillet to the oven and bake for 15-20 minutes until cooked through.
  11. Prepare the garlic sauce by heating remaining olive oil over medium heat.
  12. Add minced garlic and sauté until fragrant.
  13. Stir in chicken broth and bring to a simmer.
  14. Reduce heat to low, add heavy cream, and let the sauce simmer for 5 minutes.
  15. Remove the chicken from the oven, pour the garlic sauce over, and sprinkle with parsley.
  16. Serve hot and enjoy!

Notes

For extra flavor, marinate the chicken in olive oil and garlic for an hour before coating.
