Delightful crispy fritters filled with juicy pineapple and a hint of coconut, perfect for any time of day.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1/2 cup coconut milk
  • 2 cups pineapple, diced
  • 2 cups vegetable oil
  • 2 tablespoons powdered sugar

Instructions

  1. Whisk the Dry Ingredients: In a medium bowl, whisk together flour, cornstarch, baking powder, salt, and granulated sugar.
  2. Mix the Wet Ingredients: In a separate bowl, beat the egg with coconut milk until well combined.
  3. Combine Wet and Dry: Pour the wet mixture into the dry ingredients and stir until a smooth batter forms.
  4. Add the Pineapple: Gently fold the diced pineapple into the batter, ensuring even distribution.
  5. Heat the Oil: Heat the vegetable oil in a deep skillet or pot over medium heat until it reaches about 350°F.
  6. Fry to Perfection: Use two spoons or a small ice cream scoop to drop portions of batter into the hot oil, frying for 2 to 3 minutes per side.
  7. Drain and Dust: Transfer the cooked fritters to a paper towel–lined plate to drain excess oil, then dust with powdered sugar before serving.

Notes

Serve warm with tropical fruit salad or coconut yogurt. Store leftovers in an airtight container in the refrigerator for up to 2 days.
