Cucumber Feta Salad with Lemon Greek Vinaigrette

A refreshing salad combining crisp cucumbers, creamy feta, and vibrant herbs in a tangy lemon vinaigrette, perfect for summer gatherings.

Ingredients

  • 1 large cucumber
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Slice the cucumber and place the slices in a large bowl.
  2. Whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, oregano, salt, and pepper until emulsified.
  3. Combine the thinly sliced red onion and chopped parsley with the cucumber.
  4. Dress the salad with the lemon Greek vinaigrette and gently toss to coat.
  5. Add the crumbled feta cheese and give it a final light toss.
  6. Serve immediately or chill in the refrigerator for 10 minutes.

Notes

Best served fresh, but can be stored in the fridge for up to 2 days. Add fresh vinaigrette and feta just before serving for optimal taste.
