Light and refreshing lettuce wraps filled with juicy chicken, crispy bacon, and fresh vegetables—a healthier twist on a classic BLT.

Ingredients

  • 2 cups cooked chicken breast, diced
  • 4 slices bacon, cooked and crumbled
  • 8 leaves romaine lettuce
  • 1 medium tomato, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons light mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1/2 avocado, diced
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1 tablespoon chopped fresh chives

Instructions

  1. Cook the Bacon: Cook bacon in a skillet over medium heat until crispy then drain on paper towels and crumble when cool.
  2. Mix the Salad Ingredients: Place diced chicken, crumbled bacon, tomato, red onion, avocado, light mayonnaise, Greek yogurt, lemon juice, garlic powder, black pepper, and sea salt in a mixing bowl.
  3. Combine All Ingredients: Gently stir all ingredients until well combined to form the BLT chicken salad.
  4. Prepare the Lettuce Wraps: Arrange romaine lettuce leaves on a serving platter and spoon the chicken salad evenly onto each leaf.
  5. Garnish and Serve: Garnish with chopped fresh chives and serve immediately as handheld wraps.

Notes

Feel free to customize with spices or additional veggies. Use rotisserie chicken for an easy shortcut.
