  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • 2 cucumbers, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar

Instructions

  1. Mix the Chicken Patty Ingredients: In a bowl, combine the ground chicken, breadcrumbs, egg, red onion, garlic, parsley, oregano, cumin, salt, and pepper until just mixed. Be gentle to keep the mixture tender.
  2. Shape the Patties: Shape the mixture into eight equal-sized patties. This not only helps with cooking evenly but also creates mouthfuls of flavor in every bite.
  3. Sauté the Patties: Heat two tablespoons of olive oil in a skillet over medium heat. Cook the patties for four to five minutes on each side until they are golden brown and fully cooked through.
  4. Prepare the Tzatziki: In a separate bowl, combine the Greek yogurt, grated and drained cucumber, minced garlic, dill, lemon juice, salt, and pepper. Mix well and then refrigerate for a refreshing dip.
  5. Toss the Cucumber Salad: In another bowl, toss the sliced cucumbers and thinly sliced red onion with olive oil, red wine vinegar, and a pinch of salt and pepper. This salad will add a crisp mouthfeel to your meal!

Notes

For a lighter version, swap some of the chicken with ground turkey. Feel free to add spices according to your preference.
