A vibrant salad featuring perfectly grilled shrimp marinated in Cajun spices, tossed with fresh veggies for a refreshing summer meal.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil (for shrimp)
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil (for dressing)
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Combine shrimp, Cajun seasoning, 1 tablespoon olive oil, and fresh lime juice in a bowl.
  3. Thread the seasoned shrimp onto skewers or place them in a grill basket.
  4. Grill the shrimp for 2 to 3 minutes per side until opaque and charred.
  5. Mix together chopped romaine lettuce, halved cherry tomatoes, diced avocado, red onion, and chopped cilantro in a large bowl.
  6. Whisk together 2 tablespoons olive oil, red wine vinegar, salt, and black pepper in a small bowl.
  7. Pour the dressing over the salad and toss gently.
  8. Divide the salad onto plates and top with grilled shrimp. Serve immediately.

Notes

Store salad ingredients and shrimp separately to maintain freshness. Adjust Cajun seasoning to taste.
