Ground Turkey Rice Bowls with Bang Bang Sauce

A quick and colorful rice bowl featuring ground turkey, crisp vegetables, and a zesty Bang Bang sauce.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1 avocado, sliced
  • 2 sliced green onions
  • 1/4 cup chopped cilantro
  • Bang Bang Sauce: 1/2 cup mayonnaise, 2 tablespoons sweet chili sauce, 1 tablespoon sriracha, 1 teaspoon honey, 1 teaspoon rice vinegar

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic to the skillet and sauté until softened, about 3 minutes.
  3. Introduce the ground turkey to the skillet, breaking it apart with a spoon. Sprinkle in chili powder, cumin, smoked paprika, salt, and black pepper. Cook until the turkey is no longer pink, about 6 to 8 minutes.
  4. Whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a small bowl to make the Bang Bang sauce.
  5. Divide the cooked rice among four bowls, then top with the seasoned ground turkey and the shredded carrots and cabbage.
  6. Slice the avocado and place it on top of the rice bowl.
  7. Drizzle the Bang Bang sauce over each bowl.
  8. Garnish with sliced green onions and chopped cilantro before serving.

Notes

For extra flavor, feel free to add your favorite vegetables or swap out ground turkey for chicken or a plant-based protein.
